Cinnamon Strawberry Cobbler

Nothing makes me sadder than the fact that strawberry season is coming to an end :(
But no worries, you can make this strawberry cobbler all year round. Just make the berry filling and freeze it for whenever your heart desires some warm cinnamon strawberry cobbler for a quick dessert!



For Berry Filling:

5 cups sliced strawberries
1/2 tbsp lemon juice
1/4 cup white sugar
1/4 cup brown sugar
1/2 tsp cinnamon powder
1/8 tsp nutmeg

For Cobbler Biscuit:

1 cup All Purpose Flour
1/4 cup white sugar
1/4 cup brown sugar
1 tsp baking powder
1/2 tsp salt
1/2 cup butter (chilled and grated)
1/4 cup hot water

For Cinnamon Sugar Topping:

1/4 cup white sugar
2 tbsp cinnamon


Preheat oven to 425 degrees Fahrenheit.

In a large bowl, combine the strawberries and lemon juice. Then add the white sugar, brown sugar, cinnamon powder and nutmeg. Mix well.

Bake the berry filling for 10 minutes.

Combine the all purpose flour, white sugar, brown sugar, baking powder and salt in a bowl.

Add the grated butter to the dry ingredients.

Add the hot water and mix until the cobbler biscuit mix is just combined with lumps of butter.

Remove the berry mixture from the oven and add the biscuit filling evenly in the pan.

Top the pan with the cinnamon sugar topping.

Bake for 20 minutes or until a golden crust forms.

Serve warm with a dollop of ice cream and enjoy!
