Spicy Butterscotch Pudding

This spicy butterscotch pudding comes to you from the kitchens of a close friend of mine. Her mother makes this incredible recipe every year for thanksgiving without fail; but I enjoy recreating it in my kitchen to help me with my post New Years gloom! There's nothing like a spiced pudding to lift your mood🥰 So enjoy a spoonful of goodness at the end of this holiday season with this super simple recipe.

SERVES:
4

INGREDIENTS:
2 tbsp Cornstarch
1/2 cup Brown Sugar
1 pinch Salt
1 cup Milk
3/4 cup whole milk + 1/4 cup heavy cream
2 tsp Vanilla Extract
1 tbsp Butter
1/2 tsp Ceylon Cinnamon
1 pinch Red Chilli Powder

METHOD:
Add cornstach, brown sugar and salt in a saucepan and whisk until they're combined.

Add the milk with the whole milk and heavy cream mixture to the dry ingredients and whisk until everything is smooth and combined.

On medium heat, bring the saucepan to a simmer while whisking continously until the mixture begins to thicken.

Once the mixture begins to thicken, remove from heat and whisk in the vanilla extract, butter, cinnamon and red chilli powder.

Pour the pudding mixture into 4 bowls and chill in the fridge for at least an hour.

Serve chilled topped with a dusting of cinnamon sugar!
